Ingredients

1# Ham Steaks (can sub for summer sausage, cooked pork chop, etc)
½ # Sharp White Cheddar, shredded
½ # Mesclun Greens (Spring Mix)
1 Cup Sliced Almonds, Toasted
1 Cup Craisins
4 ea. Hard Boiled eggs, whites diced and yolks separated
1 Cup white onion, finely diced
1 Cup Jalapeño, finely diced
½ Cup Olive Oil
½ Cup red wine vinaigrette
Pinch of sea salt
Directions
For the vinaigrette, make at least one hour ahead of serving. The egg whites, onion and jalapeño will become slightly pickled. Mix together the egg whites, oil, vinegar, onion, jalapeños and salt. Simply shake well before applying to the salad.
Assemble, Add all of the non-vinaigrette ingredients into a bowl, including the egg yolk, give it a couple of tosses, then dress with the vinaigrette and eat!
