Nice and tender, fried up well to a good medium. A bit gamey, but still very good.
The meat came out very tough, when grilled for only 4 minutes (2min / side) and didn't taste as good as I remember elk tasting. I wouldn't purchase it again.
Hi Alan. I am sorry to hear about the Elk not turning out as you wanted. With the 2 min per side, they should have turned out perfectly Med Rare Plus. These medallions are generally pretty tender under those cooking conditions, I have had them a few times now and I cook them the same.
