Elk Flank Steak - ~1lb - New Zealand Wapiti

The New Zealand Wapiti is a form of a Red Deer that is closely related to the North American Elk. They do a very sustainable program and is aligned with our values of why the meat makes sense, even when it comes from half way around the world.

This cut is perfect for fajitas or carne asada. Whip up some chimicurri and feel those taste buds move in anticipation of the greatness. It is a softer cut of meat and easy to enjoy. 
Please do not over cook that and always cut against the grain.

Benefits of Elk
High in protein, vitamins and Omega 3 fatty acid, it also contains heme-iron which is a much more efficient iron than a plant-based iron. Similar to Bison in its benefits, Elk meat is a leaner meat that is considered "healthier". 

Elk is naturally high in protein, vitamins and Omega 3 fatty acid, and is significantly lower in saturated fats compared to beef. In other words, it's one of the healthier choices of red meat, making it a heart-smart substitute for beef in many recipes. Since it is quite lean, we recommend cooking it to medium-rare to ensure it stays moist and succulent.

Cooking Method: Elk is lean and will cook quicker than beef, take note. If you feel you are undercooking it, the meat is probably ready.
