This cut has been a favorite since I remember a butcher telling me that the ribeye hid the true flavor of the animal. For some reason, it resonated and to this day, a NY Strip prepared medium rare with a bold red wine reduction is music to my mouth. Tender, beefy and lean, this cut comes from the short loin and only the Filet Mignon is found to be more tender.
High quality and nutrient rich ground beef is hugely important for every person's diet. From McLeod, MT, these animals are all free-ranging and grass fed without hormones or antibiotics. All are raised between 24-30 months and processed locally at a USDA processing facility. These are dry-aged for 14 days prior to further processing providing you more meat and less liquid.
