Bison Tenderloin is an easy item to cook. All you need to do is either a) cook the 6 lb roast as a roast, or b) portion down the 6 lb roast into steaks and re-freeze what you will not be using. An easy preparation is a classic salt, pepper, garlic powder rub and let sit for 45 min or if you have time, wrap it in saran wrap and leave in the fridge overnight. Bring to room temp before you bbq or pan sear.
Pan searing followed by a short bake will be about 2-2.5min min on each side followed by another 5 min in the oven at 400F. If you do this method, follow the technique used in pan searing these beef filet mignons
- prior to putting in the oven.
