The Bison Sirloin strip steak is our favorite lean cut. With this Sirloin roast, you can roast whole or cut into steaks. If you are a food-prepper, this is your steak. This lean cut packs in much protein, creatine and vital vitamins and minerals. This cut lends itself to between Medium Rare and Medium temperature (internal). It can pair well with your favorite seasoning blend, or a simple au jus sauce. It is similar to it's beef counterpart but will cook faster given the lower fat content.
