Bison Ribeye - ~1.5 lb (2 x 12oz Steak)
This is the premier cut and our personal favorite, easy to cook and easier to eat. A very tender piece of meat, this cut cooks up with incredible flavor. This cut is friendlier to longer cooking times, however we still advise to keep it around a Medium internal temperature. It is a versatile cut and can be prepared in a multitude of ways. Our preference is a simple seasoning rub (i.e. salt, pepper).
