The Bison NY strip steak is a tender and lean cut. It is a premier cut and when cooked correctly, the best cut. This cut lends itself to a Medium Rare or Medium Rare Plus temperature (internal). It can pair well with a smooth au jus sauce, a robust gorgonzola sauce, or by itself seasoned with salt and pepper (or your favorite seasoning blend). It is similar to it's beef counterpart but will cook faster given the lower fat content.
