This cut is also known as the Hanger Steak and is commonly referred as the "Butcher's Cut". The latter is because this was the cut most butchers would keep for themselves based on the flavor profile, texture, and tenderness. 
Located in the Plate Primal, just below the Rib Primal, this lean and boneless cut contains a healthy dose of beef flavor. Best when marinated and grilled and sliced into medallions.
