Butchered perfectly into 2 x 6oz-8oz steaks per pack. These steaks are extremely tender and will be a highlight for any meal. They pair nicely with a robust sauce that exposes the excellent flavor profile from the nutrient dense grasses foraged upon.

This bison tastes great, the only disclaimer we have is to not overcook it. Cooking it Medium is the maximum you want to cook this steak. Anything over Medium can result in "gamey" flavor and tough eating. Everything under will be perfection.

Chewy, bland, dense meat.. I can understand why the plains Indians turned it into jerky. I'm trying the Wagyu.

It is never good to hear that a product was not liked. These tenderloin steaks are the same as filet mignon so the lack of robust flavor comes from this cut being tender but lean. As you probably know, it is always best to cook game meats to a maximum of medium temperature. We will send you an email to make this right.
