Smoking, Grilling to Baking, it is a versatile and lean cut of meat. Its size lends itself to a nice family style roast for a cozy Sunday or a week's full of prepared meals.
It is fairly tender with full flavor. When prepared to medium rare/medium rare plus, with a fresh, quality rub this cut can be magical tasting (and addictive).
