This cut has been a favorite since I remember a butcher telling me that the ribeye hid the true flavor of the animal. For some reason, it resonated and to this day, a NY Strip prepared medium rare with a bold red wine reduction is music to my mouth.
Tender, beefy and lean, this cut comes from the short loin and only the Filet Mignon is found to be more tender.
Always grass fed from small batch suppliers, the quality of this product is second to none. These are thick cut and for the serious-minded BBQ enthusiasts only. Seriously, these are massive.
