Chuck steak is a cut of beef that is part of the chuck primal, which is a large section of meat from the shoulder area of the cow. This part of the animal gets a lot of exercise, making the muscles somewhat tough. The gristle and fat that make the steak tougher, this also makes the cut much more flavorful when cooked correctly.
