This cut is off the top of the Sirloin primal. It is a tender cut with a decent amount of marbling (intramuscular fat). This can be enjoyed as a mini roast baked in the oven, smoked slowly over the grill or bbq'd. It is best served Medium Rare to Medium to maximize the juiciness of the cut.
