Petrale Sole (Eopsetta jordani) is a round or oval-shaped flounder with a big mouth and both eyes on its right side; the blind side is white and the eyed side is light to dark brown.
Petrale sole is an excellent source of low-fat protein, calcium, and other nutrients. They have a wonderfully sweet, delicate nutty flavor and thin fillets that are best cooked by simply sautéing.
Ideal Cooking: Sautéed in a simple sauce of white wine, shallots and herbed butter
