Cut from the Chuck primal, the Chuck/Delmonico Roast is close to the end of the Ribeye which gives it the intramusclar fat marbling associated with Ribeyes. This is an excellent cut with a robust beefy flavor.
We do not offer Delmonico Roasts often so do yourself a favor and jump on this while supplies last.
Season accordingly - Salt and pepper is great or use your favorite seasoning blend - it will not take much for this to taste amazing.
This cut lends itself to high heat baking vs braising.
For experienced BBQs (pitmasters) you know what to do with this on the grill - let it sear on the hot part of the BBQ on both sides for a good 7-10 min each side. After remove from direct heat and place away from direct heat, cover the bbq and let the indirect heat cook to the appropriate temp.
