The tenderloin is a muscle that sits beneath the ribs and under the backbone. This is a very tender part of the beef and highly regarded. We have taken whole tenderloins and had them processed into steaks. These tenderloin steaks make a great treat. One piece of advice, add flavor to these. We like butter, thyme as can be seen in the below video/recipe. These are a grass-fed and grass-finished product.
