Born from the Big Horn Mountains in Ten Steep, Wyoming, Carter Country Meats continues the family ranching legacy of raising the best quality cattle with the utmost care and respect for the land and animals. 
Cut from the Plate primal, the Inside Skirt is known for being "the" cut for fajita meat. A tougher cut of meat that is thinner, this cut pairs deliciously well with a chimichurri sauce - never tried it, you will thank us later when you do. Highly coveted and rarely available. This Dry-Aged Inside Skirt is a cut above the rest. 

Preparation Instruction:
Salt - We prefer a flake salt to start if you are not using a Chimchurri sauce, we recommend salt and pepper (or your favorite seasoning blend)
Your favorite Chimichurri sauce (this one is a favorite from Grill Seeker)
Servings: 6

Ingredients:
  • 3 cloves garlic finely minced
  • 1 shallot finely chopped
  • 1 red jalapeño seeded and finely chopped
  • 2 tbsp finely chopped chives
  • ½ cup minced fresh cilantro
  • 1/4 cup minced fresh flat-leaf parsley
  • 3/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 3 tsp kosher salt (or salt to taste)
Instructions:
Prep your ingredients.
  1. Add garlic, shallot, jalapeño, chives, cilantro, and parsley into a bowl. Toss gently.
  2. Add in olive oil, red wine vinegar, and salt. Mix well.


Cooking Instruction:
This is a tougher meat and to render the connective tissue and tougher meat normally takes a long and slow cooking. However, if you are making fajitas, use a cast iron pan, get it nice and hot, sear on both side for a couple min each side and pull off.  Let rest about 5 min then cut against the grain. 
Ideal temp is medium rare for this cut
